Kiley in response to your message..I am posting because many will encounter this problem and unaware. First to answer the SS question for Kiley. Contact the SS office. They will look to see if you paid in enough quarters to collect at 62. Now, if you havent paid in enough you can collect on Davids SS even though you are divorced. As long as you were married to him 10 years or longer. They state even if you remarried and divorced 2nd hubby you can still resort back to first ex....This is private and they arent asked for permission and arent told as its private. It takes nothing from what they get. Now....many are having this issue. When a spouse turns 65 and working he automatically is dropped from the company insurance and goes on medicare insurance When the company drops work insurance it also drops the partner. Some companies will offer the insurance for the spouse but its very costly. You are usually covered for up to three months after the person turns 65. Many with health issues are left with "now what do I do". All you can do is hunt private insurance and this comes with a price.

These are really fun to make for kids. I noticed they are using toothpicks to hold the wheels on. I would use pimento cheese to hold the wheels as toothpicks arent advisable with small children. With my boys they would of poked each other or tried to chew them...lol..lol..

Tooooooooooooooooooooo funny

A married couple is traveling by car from Victoria to Prince George. Being seniors, after almost eleven hours on the road, they were too tired to continue and decided to take a room. But, they only planned to sleep for four hours and then get back on the road. When they checked out four hours later, the desk clerk handed them a bill for $350.00.

The man explodes and demands to know why the charge is so high. He told the clerk although it's a nice hotel; the rooms certainly aren't worth $350.00 for four hours. Then the clerk tells him that $350.00 is the 'standard rate'. He insisted on speaking to the Manager. The Manager appears, listens to him, and then explains that the hotel has an Olympic-sized pool and a huge conference center that were available for us to use. "But we didn't use them," the husband said. "Well, they are here, and you could have," explained the Manager.

The Manager went on to explain that the couple could also have taken in one of the shows for which the hotel is famous. "We have the best entertainers from New York , Hollywood , and Vegas perform here," the Manager says. "But we didn't go to any of those shows," the husband said. "Well, we have them, and you could have," the Manager replied. No matter what amenity the Manager mentioned, the husband replied, "But we didn't use it!"

The Manager is unmoved, and eventually the husband gave up and agreed to pay. As he didn't have the check book, he asked his wife to write the check. She did and gave it to the Manager. The Manager is surprised when he looks at the check. "But ma'am, this is made out for only $50.00." "That's correct. I charged you $300.00 for sleeping with me," she replied. "But I didn't!" exclaims the Manager. "Well, too bad, I was here, and you could have." Don't mess with senior citizens..... They didn't get there by being stupid.

Chit Chat - Welcome Center - Page 32 Almond10

Almond Joy Fudge

Fudge Layer:
1 1/2 cups milk chocolate Hershey’s Kisses, unwrapped
1 1/2 cups chocolate candy melts (like Wilton or Almond Bark)
1 – 14 oz can sweetened condensed milk

Coconut Layer:
1 – 14 oz bag sweetened shredded coconut
1 cup powdered sugar
1/2 cup + 1 tbsp. sweetened condensed milk

Chocolate Candy Layer:
20 whole raw almonds
1 cup chocolate candy melts (like Wilton or Almond Bark)

Prepare a 9×9-inch baking dish by lining it with parchment paper and lightly spraying with non-stick cooking spray. Set aside. In a medium saucepan over low heat, stir together the Hershey’s Kisses, the chocolate melting candy, and the whole can of sweetened condensed milk until melted and smooth. The mixture should start to pull away from the edges of the pan. Scrape fudge into the prepared baking dish and set aside.

In a large bowl, mix together the 1/2 cup + 1 tbsp. sweetened condensed milk, the coconut, and the powdered sugar. It’s best if you can use a stand mixer for this, as it really takes some “elbow grease” to mix it together thoroughly. If you choose to mix by hand, be aware, the mixture may appear dry at first, but as you continue to “work” the coconut, the consistency will improve.

Spread out a piece of parchment or wax paper that is approximately the size of the 9×9-inch dish. Scrape out the coconut mixture onto the paper. Use a rubber spatula or clean hands to press the coconut into a square the size of the dish. Invert the coconut square on top of the fudge and gently press down. Spread the almonds evenly over top of the coconut layer.

Microwave the remaining melting chocolate for one minute. Stir until smooth and pour as evenly as possible over the almonds. Use a rubber spatula to gently spread the chocolate in an even layer. Let fudge cool completely to set, about 4-6 hours at room temperature or an hour in the refrigerator. Cut into 1 inch squares to serve. (I found that inverting the dish onto a cutting board and cutting from the bottom, the soft layer, down to the hard chocolate layer made the cutting a little less messy.)

Egg Custard Pie

1 unbaked pastry shell (9 inches)
4 eggs
1/2 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
2-1/2 cups milk
1/4 teaspoon ground nutmeg

Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Remove from the oven and set aside.

Separate one egg; set the white aside. In a small bowl, beat the yolk and remaining eggs just until combined. Blend in the sugar, salt and vanilla. Stir in milk. Beat reserved egg white until stiff peaks form; fold into egg mixture.

Carefully pour into crust. Cover edges of pie with foil. Bake at 350° for 25 minutes. Remove foil; bake 15-20 minutes longer or until a knife inserted near the center comes out clean. Cool on a wire rack. Sprinkle with nutmeg. Store in the refrigerator. Makes 8 servings.

Chit Chat - Welcome Center - Page 32 Hershe10

Hershey's Bliss Milk Chocolate Eggs

1/2 cup Hershey's Premier White Chips
1 teaspoon shortening(do not use butter, margarine, spread or oil)
Granulated sugar
Liquid food color
1 tablespoon warm water
1 teaspoon pasteurized dried egg whites(meringue powder)

Unwrap chocolate candies. Line tray with wax paper. Place white chips and shortening in small microwave-safe bowl. Microwave at mediom (50%) 1 minute; stir. If necessary, microwave at medium an additional 10 seconds at a time, stirring after each heating, until chips are just melted when stirred. Using fork dip chocolate candies in melted white chips. (If mixture is too hot the chocolate will start to melt. Cool until chocolate does not begin to melt when dipped.) Tap fork on edge of container to remove excess white coating. (If coating becomes too thick, microwave at medium 10 seconds and stir.) Place on prepared tray. Allow coating to harden.

Meanwhile, tint sugar with food color, if desired. Place sugar into individual small bowl for each color desired. Add several drops liquid food color. Stir until sugar is uniform color. With sharp knife scrape or cut away "chocolate foot" that forms and any bits of hardened coating that are irregular. Lightly buff surface of coated egg with paper towel to smooth out any bumps.

Whisk together meringue powder and water until light and foamy. Using small brush lightly coat outside of chocolate pieces with meringue mixture. Roll in or sprinkle with sugar; place on prepared tray to dry. Store sugared chocolates in cool, dry place.

Pecan Cake Bars

Crust:
2 sticks unsalted butter, softened
2/3 cup packed brown sugar
2 2/3 cups all-purpose flour
1/2 teaspoon salt

Topping:
1/2 cup unsalted butter
1 cup packed light brown sugar
1/3 cup honey
2 tablespoons heavy cream
2 cups chopped pecans

Preheat the oven to 350ºF and line a 9x13-inch pan with foil, leaving enough for a 2-inch overhang on all sides. First make the crust by creaming together the butter and brown sugar until fluffy in a stand mixer fitted with the paddle attachment. Add in the flour and salt and mix until crumbly. Press the crust into the foil-lined pan and bake for 20 minutes until golden brown.

While the crust bakes, prepare the filling by combining the butter, brown sugar, honey and heavy cream in a saucepan and stirring it over medium heat. Simmer the mixture for 1 minute, then stir in the chopped pecans. Remove the crust from the oven and immediately pour the pecan filling over the hot crust spreading it to cover the entire surface. Return the pan to the oven and bake an additional 20 minutes. Remove the pan and allow the bars to fully cool in the pan. Use the foil overhang to lift out the bars and transfer them to a cutting board. Peel off the foil, slice into bars and serve.

Chit Chat - Welcome Center - Page 32 Carmel10

Caramel Apple Cheesecake Bars

Crust:
2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 cup (2 sticks) butter, softened

Cheesecake Filling:
3 (8-ounce) packages cream cheese, softened
3/4 cup sugar, plus 2 tablespoons, divided
3 large eggs
1 1/2 teaspoons vanilla extract

Apples:
3 Granny Smith apples, peeled, cored and finely chopped
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Preheat oven to 350 degrees. In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or 2 forks) until mixture is crumbly. Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.

In a large bowl, beat cream cheese with 3/4 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.

In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. Sprinkle evenly with Streusel topping. Bake 40-45 minutes, or until filling is set. Drizzle with caramel topping and let cool. Serve cold and enjoy!

Streusel Topping:
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick cooking oats
1/2 cup (1 stick) butter, softened

In a small bowl, combine all ingredients. I like to really combine it by using my clean hands to thoroughly combine the butter into the mixture.

Chit Chat - Welcome Center - Page 32 Eclair10

Chocolate Eclair Cake

Crust:
1 cup water
1/2 cup butter
1 cup flour
4 large eggs

Filling:
1 (8 ounce) package cream cheese, softened
1 large box (5.1 ounces) vanilla instant pudding
3 cups milk

Topping:
1 8 oz. container cool whip (just enough for a thin layer. I don't use the whole container) or one batch of homemade whipped cream
chocolate syrup or homemade chocolate sauce

Preheat oven to 400. Lightly grease a 9"X13" glass baking pan. For the Eclair Crust: In a medium saucepan, melt butter in water and bring to a boil. Remove from heat. Stir in flour. Mix in one egg at a time, mixing completely before adding another egg. Spread mixture into pan, covering the bottom and sides evenly. Mixture will be very wet. If the sides of your pan are too greased you won't be able to get the mixture to stay up the sides so make sure to just lightly grease. No big deal but I like the crust to go up the sides a bit.

Bake for 30-40 minutes or until golden brown (Mine only took 25 minutes.) You may want to check it occasionally-you don't want to overcook the crust, it will ruin the cake! Remove from oven and let cool (don't touch or push bubbles down).

For the Filling: Whip cream cheese in a medium bowl. In separate bowl make vanilla pudding by beating the pudding mix and the milk for 3 minutes and put in the fridge until set. Make sure pudding is thick before mixing in with cream cheese. Slowly add pudding to cream cheese, mixing until there are no lumps. Let cool in fridge. When the crust is completely cooled, pour filling in. Top with layer of cool whip however thick you want it and serve with a drizzle chocolate syrup.

Fried Rice

3 cups cooked white rice (day old or leftover rice works best!)
3 tbs sesame oil
1 cup frozen peas and carrots (thawed)
1 small onion, chopped
2 tsp minced garlic
2 eggs, slightly beaten
1/4 cup soy sauce

On medium high heat, heat the oil in a large skillet or wok. Add the peas/carrots mix, onion and garlic. Stir fry until tender. Lower the heat to medium low and push the mixture off to one side, then pour your eggs on the other side of skillet and stir fry until scrambled. Now add the rice and soy sauce and blend all together well. Stir fry until thoroughly heated! You could really play around with this rice too! Try adding some diced ham, or green onion Smile

I make all Sadie's foods. Here is the recipe to make dog biscuits

Chit Chat - Welcome Center - Page 32 Dogbis10

2 eggs
1/2 cup canned pumpkin
2 tablespoons dry milk
1/4 teaspoon sea salt
2 1/2 cups brown rice flour
1 teaspoon dried parsley (optional)

Preheat oven to 350. In large bowl, whisk together eggs and pumpkin to smooth. Stir in dry milk, sea salt, and dried parsley (if using, optional). Add brown rice flour gradually, combining with spatula or hands to form a stiff, dry dough. Turn out onto lightly floured surface (can use the brown rice flour) and if dough is still rough, briefly knead and press to combine.

Roll dough between 1/4 – 1/2″ – depending on your dog’s chew preferences, – and use biscuit or other shape cutter to punch shapes, gathering and re-rolling scraps as you go. Place shapes on cookie sheet, no greasing or paper necessary. If desired, press fork pattern on biscuits before baking, a quick up-and-down movement with fork, lightly pressing down halfway through dough. Bake 20 minutes. Remove from oven and carefully turn biscuits over, then bake additional 20 minutes. Allow to cool completely on rack before feeding to dog.

Brown rice flour gives the biscuits crunch and promotes better dog digestion. Many dogs have touchy stomachs or allergies, and do not, like many people I know, tolerate wheat. Makes up to 75 small (1″) biscuits or 50 medium biscuits

You can add 1/4 teaspoon of cinnamon it helps dissolve food particles between teeth. Sadie doesn't like cinnamon so I don't add it. If you add I suggest making up a small batch to make sure your dog will eat it

Chit Chat - Welcome Center - Page 32 Banana10

Banana Pudding

1 cup sugar
1/2 cup all-purpose flour
1/2 teaspoon salt
2 cups milk (NOT skim)
4 or 5 ripe bananas, sliced thin (cover with plastic wrap or sprinkle with lemon juice to keep them from turning brown)
1 box vanilla wafers
1 teaspoon Vanilla extract
1 tablespoon Butter (not margarine)
4 Egg yolks (Large eggs or better)

Meringue:
4 egg whites, room temperature
5 tablespoons sugar
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract

Preheat oven to 375°. Line the bottom of a 9x9-inch pan with a layer of vanilla wafers. Combine sugar, flour and salt in a bowl, and mix well. Set aside. In a heavy saucepan, beat the egg yolks well. Over medium heat, add the flour mixture to the egg yolks, alternately with the milk and vanilla, stirring constantly. Bring to a gentle boil and, when the mixture begins to thicken, add the butter, continuing to stir. Keep boiling and stirring until mixture reaches a nice pudding consistency. Make sure you don't scorch the pudding. Remove from heat.

Place a layer of banana slices on top of the vanilla wafers. Pour half of the pudding over the banana layer. Put down another layer of vanilla wafers, another layer of banana slices, and cover with the remaining pudding.

Beat the egg whites at high speed until they form soft peaks. Add the cream of tartar. At high speed, gradually add the sugar, a tablespoon at a time, and beat until stiff peaks form. Fold the vanilla into the meringue, and spread the meringue over the pudding, sealing it at the sides of the dish. Bake until meringue browns, 12 to 15 minutes.
