Ham Cheese Bow Ties

1 garlic clove, minced
1/4 cup butter, cubed
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1/2 teaspoon prepared mustard
2-1/2 cups (10 ounces) shredded Colby cheese
2 cups uncooked bow tie pasta, cooked and drained
6 to 8 ounces fully cooked ham, julienned
1/4 cup grated Parmesan cheese

In a large saucepan, saute garlic in butter. Stir in flour, salt and pepper until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly.

Stir in the mustard and Colby cheese; cook and stir until cheese is melted. Add pasta and ham; stir until coated.

Transfer to a greased 2-qt. baking dish. Sprinkle with Parmesan cheese. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Makes 4-6 servings.

Sausage Spaghetti Spirals

1 pound bulk Italian sausage
1 medium green pepper, chopped
5 cups spiral pasta, cooked and drained
1 jar (28 ounces) meatless spaghetti sauce
1-1/2 cups (6 ounces) shredded part-skim mozzarella cheese

In a skillet, cook sausage and green pepper over medium heat until meat is no longer pink; drain. Stir in pasta and spaghetti sauce; mix well.

Transfer to a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 25 minutes. Uncover; sprinkle with cheese. Bake 5-10 minutes longer or until the cheese is melted. Makes 10 servings.

Sausage Broccoli Manicotti

1 package (8 ounces) manicotti shells
2 cups (16 ounces) 4% cottage cheese
3 cups frozen chopped broccoli, thawed and well drained
1-1/2 cups (6 ounces) shredded part-skim mozzarella cheese, divided
3/4 cup shredded Parmesan cheese, divided
1 egg
2 teaspoons minced fresh parsley
1/2 teaspoon onion powder
1/2 teaspoon pepper
1/8 teaspoon garlic powder
1 pound bulk Italian sausage
4 cups meatless spaghetti sauce
2 garlic cloves, minced

Cook manicotti according to package directions. Meanwhile, in a large bowl, combine the cottage cheese, broccoli, 1 cup mozzarella cheese, 1/4 cup Parmesan cheese, egg, parsley, onion powder, pepper and garlic powder; set aside.

In a large skillet, cook the sausage over medium heat until no longer pink; drain. Add spaghetti sauce and garlic. Spread 1 cup meat sauce in a greased 13-in. x 9-in. baking dish.

Rinse and drain shells; stuff with broccoli mixture. Arrange over sauce. Top with remaining sauce. Sprinkle with remaining mozzarella and Parmesan. Bake, uncovered, at 350° for 40-50 minutes or until heated through. Makes 6-8 servings.

Hungarian Pasta Goulash

1 pound beef stew meat, cut into 1-inch cubes
1 pound lean boneless pork, cut into 1-inch cubes
2 large onions, thinly sliced
2 tablespoons vegetable oil
2 cups water
2 tablespoons paprika
1/2 teaspoon salt
1/2 teaspoon dried marjoram
1 tablespoon all-purpose flour
1 cup (8 ounces) sour cream
Hot cooked noodles

In a large skillet, brown beef, pork and onions in oil over medium heat; drain. Add the water, paprika, salt and marjoram; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until meat is tender.

Just before serving, combine flour and sour cream until smooth; stir into meat mixture. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened and bubbly. Serve over noodles. Makes 6-8 servings.

Meaty Spinach Manicotti

2 packages (8 ounces each) manicotti shells
1/4 cup butter, cubed
1/4 cup all-purpose flour
2-1/2 cups milk
3/4 cup grated Parmesan cheese
1 pound bulk Italian sausage
4 cups cubed cooked chicken or turkey
2 packages (10 ounces each) frozen chopped spinach, thawed, squeezed dry
2 eggs, beaten
1 cup (4 ounces) shredded part-skim mozzarella cheese
2 jars (26 ounces each) spaghetti sauce
1/4 cup minced fresh parsley

Cook manicotti according to package directions. Meanwhile, melt butter in a saucepan. Stir in the flour until smooth. Gradually add milk.

Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in Parmesan cheese until melted; set aside. Drain manicotti; set aside.

In a large skillet, cook sausage over medium heat until no longer pink; drain. Add the chicken, spinach, eggs, mozzarella cheese and 3/4 cup white sauce. Stuff into manicotti shells.

Spread 1/2 cup spaghetti sauce in each of two ungreased 13-in. x 9-in. baking dishes. Top with manicotti. Pour remaining spaghetti sauce over the top.

Reheat the remaining white sauce, stirring constantly. Pour over spaghetti sauce. Bake, uncovered, at 350° for 45-50 minutes. Sprinkle with parsley. Makes 14-16 servings.

Cheeseburger Pasta Skillet

1 package (7-1/4 ounces) macaroni and cheese
1 pound ground turkey or beef
1/2 cup chopped onion
1 package (16 ounces) frozen mixed vegetables
1/3 cup ketchup
1/4 cup water
1/2 teaspoon prepared mustard
1/4 teaspoon garlic powder
3/4 cup shredded cheddar cheese
Salt and pepper to taste

Prepare macaroni and cheese according to package directions. Meanwhile, in a large skillet, brown the turkey or beef with the onion; drain. Stir in vegetables, ketchup, water, mustard and garlic powder.

Cook until vegetables are crisp-tender, about 10 minutes. Add cheddar cheese and stir until melted. Mix in macaroni and cheese. Season with salt and pepper. Makes 4-6 servings.

Pizza Macaroni Bake

1 package (7-1/4 ounces) macaroni and cheese dinner mix
6 cups water
1 pound ground beef
1 medium onion, chopped
1 small green pepper, chopped
1 cup (4 ounces) shredded cheddar cheese
1 jar (14 ounces) pizza sauce
1 package (3-1/2 ounces) sliced pepperoni
1 cup (4 ounces) shredded part-skim mozzarella cheese

Set the cheese packet from dinner mix aside. In a saucepan, bring water to a boil. Add macaroni; cook for 8-10 minutes or until tender.

Meanwhile, in a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Drain macaroni; stir in the contents of cheese packet.

Transfer to a greased 13-in. x 9-in. baking dish. Sprinkle with cheddar cheese. Top with beef mixture, pizza sauce, pepperoni and mozzarella cheese. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Makes 6-8 servings.

1 package (12 ounces) fettuccine
1 cup chopped fresh or frozen broccoli
3 tablespoons butter
1 tablespoon all-purpose flour
2/3 cup milk
1/4 cup grated Parmesan cheese

Cook fettuccine according to package directions. Meanwhile, in a large saucepan, bring 1 in. of water and broccoli to a boil. Reduce heat; cover and simmer for 4-6 minutes or until crisp-tender. Drain.

In a large saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually whisk in milk. Bring to a boil; cook and stir for 2 minutes or until thickened.

Remove from the heat; stir in Parmesan cheese and broccoli. Drain fettuccine; top with the broccoli mixture. Makes 4 servings.

Three-Cheese Shells

1 package (12 ounces) jumbo pasta shells
3 cups (24 ounces) ricotta cheese
3 cups (12 ounces) shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup chopped green pepper
1/2 cup chopped fresh mushrooms
2 tablespoons dried basil
2 eggs, lightly beaten
2 garlic cloves, minced
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
2 jars (one 28 ounces, one 14 ounces) spaghetti sauce, divided

Cook pasta shells according to package directions. Drain and rinse in cold water. In a bowl, combine the next 10 ingredients. Divide the small jar of spaghetti sauce between two ungreased 13-in. x 9-in. baking dishes.

Fill shells with the cheese mixture and place in a single layer over sauce. Pour the remaining spaghetti sauce over shells. Cover and bake at 350° for 20 minutes. Uncover; bake 10 minutes longer or until heated through. Makes 8 servings.

Swiss Cheese Lasagna

1 pound ground beef
1 large onion, chopped
1 garlic clove, minced
3 cups water
1 can (12 ounces) tomato paste
2 teaspoons salt
1/2 to 1 teaspoon dried rosemary, crushed
1/4 teaspoon pepper
1 package (8 ounces) lasagna noodles
8 ounces sliced Swiss cheese
1-1/2 cups (12 ounces each) 4% cottage cheese
1/2 cup shredded part-skim mozzarella cheese

In a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the water, tomato paste, salt, rosemary and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes.

Meanwhile, cook lasagna noodles according to package directions; drain. In a greased 13-in. x 9-in. baking dish, layer a third of the meat sauce, noodles and Swiss cheese.

Repeat layers. Top with cottage cheese and the remaining Swiss cheese, noodles and sauce. Sprinkle with mozzarella cheese.

Cover and bake at 350° for 30 minutes. Uncover; bake 10-15 minutes longer or until bubbly. Let stand for 10 minutes before serving. Makes 12 servings.

Asparagus Linguine

6 ounces uncooked linguine
1 small onion, chopped
2 garlic cloves, minced
1 tablespoon extra virgin olive oil
2 teaspoons butter
1/2 pound fresh asparagus, trimmed and cut into 1/2-inch pieces
2 tablespoons white wine or chicken broth
2 tablespoons grated Parmesan cheese
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper

Cook linguine according to package directions. Meanwhile, in a nonstick skillet, saute the onion and garlic in oil and butter until tender.

Add asparagus; cook and stir for 2 minutes or until crisp-tender. Add wine or broth; cook and stir for 1-2 minutes or until liquid is reduced.

Remove from the heat. Drain linguine; add to asparagus mixture. Add remaining ingredients; toss to coat. Serve immediately. Makes 4 servings.

1 egg
1 egg white
2 cups (16 ounces) 1% cottage cheese
1 package (10 ounces) frozen chopped spinach, thawed, squeezed dry
1 cup (4 ounces) shredded part-skim mozzarella cheese, divided
2/3 cup shredded Parmesan cheese, divided
1/3 cup minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
2-1/2 cups meatless spaghetti sauce, divided

Cook pasta according to package directions. Meanwhile, in a large bowl, combine the egg, egg white, cottage cheese, spinach, 2/3 cup mozzarella cheese, 1/3 cup Parmesan cheese, parsley, salt and pepper; set aside. Drain pasta; stir in 2 cups spaghetti sauce.

Layer half of the pasta mixture in a greased 11-in. x 7-in. baking dish coated with cooking spray. Top with spinach mixture, remaining pasta mixture and remaining spaghetti sauce.

Cover and bake at 350° for 35-40 minutes or until bubbly. Uncover; sprinkle with remaining mozzarella and Parmesan cheeses. Bake 5 minutes longer or until cheese is melted. Makes 8 servings.

1 package (5 ounces) frozen cooked salad shrimp, thawed
1 tablespoon lemon juice
1/2 teaspoon pepper
1 jar (16 ounces) Alfredo sauce
1/2 cup frozen peas, thawed
1/4 cup shredded Parmesan cheese

Cook pasta according to package directions. Meanwhile, in a large skillet, saute garlic in oil until tender. Stir in the crab, shrimp, lemon juice and pepper.

Cook and stir for 1 minute. Add Alfredo sauce and peas. Cook and stir until heated through. Drain pasta; top with the seafood mixture and sprinkle with Parmesan cheese. Makes 4-6 servings.

1 jar (26 ounces) spaghetti sauce
14 pieces string cheese
1-1/2 cups (6 ounces) shredded mozzarella cheese

Cook manicotti according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in spaghetti sauce. Spread half of the meat sauce into a greased 13-in. x 9-in. baking dish.

Drain manicotti; stuff each shell with a piece of string cheese. Place over meat sauce; top with remaining sauce. Cover and bake at 350° for 24-30 minutes or until heated through.

Sprinkle with mozzarella cheese. Bake, uncovered, for 5-10 minutes longer or until the cheese is melted. Makes 6-8 servings.

1 package (16 ounces) spaghetti
4 cups cubed fully cooked ham (about 1-1/2 pounds)
1/2 pound fresh mushrooms, sliced
1 medium green pepper, chopped
3 garlic cloves, minced
2 tablespoons olive oil
1 jar (7 ounces) roasted sweet red peppers, drained and cut into strips
1 can (2-1/4 ounces) sliced ripe olives, drained
1/4 teaspoon salt
1/4 teaspoon dried basil
1/4 teaspoon pepper
2 cups (8 ounces) shredded Parmesan cheese

Cook spaghetti according to package directions. Meanwhile, in a large skillet, saute the ham, mushrooms, green pepper and garlic in oil until vegetables are crisp-tender. Stir in the red peppers, olives, salt, basil and pepper.

Drain spaghetti; place in a large bowl. Add the ham mixture and Parmesan cheese; toss. Transfer to a greased 15-in. x 10-in. x 1-in. baking pan. Broil 4 in. from the heat for 4-6 minutes or until the top is lightly browned. Makes 6-8 servings.

Creamy Baked Macaroni

1-2/3 cups uncooked elbow macaroni
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup milk
1 tablespoon minced chives
1/2 teaspoon ground mustard
1/4 teaspoon hot pepper sauce
1-1/2 cups (6 ounces) Gouda or cheddar cheese (1/2-inch cubes)
2 tablespoons dry bread crumbs
1 tablespoon butter, melted

Cook macaroni according to package directions; drain. In a large bowl, combine the soup, milk, chives, mustard and hot pepper sauce. Stir in macaroni and cheese.

Spoon into a greased shallow 2-qt. baking dish. Combine bread crumbs and butter; sprinkle over the top. Bake, uncovered, at 400° for 25-30 minutes or until heated through and bubbly. Makes 4-6 servings.

1 can (4 ounces) mushroom stems and pieces, drained
1 egg, lightly beaten
2 cups (16 ounces) 4% cottage cheese
1 package (10 ounces) frozen chopped spinach, thawed, squeezed dry
1/4 cup grated Parmesan cheese
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
2 cups (8 ounces) shredded part-skim mozzarella cheese

Cook pasta according to package directions. Meanwhile, in a large skillet, cook the sausage, onion and garlic over medium heat until sausage is no longer pink; drain.

Stir in spaghetti sauce and mushrooms. Bring to a boil. Reduce heat; cover and cook for 15 minutes or until heated through. Drain pasta. In a large bowl, combine the egg, cottage cheese, spinach, Parmesan cheese, salt and pepper.

Spread 1 cup sausage mixture in a greased 13-in. x 9-in. baking dish, Top with spaghetti and remaining sausage mixture. Layer with spinach mixture and mozzarella cheese.

Cover and bake at 375° for 45 minutes. Uncover; bake 15 minutes longer or until lightly browned and heated through. Let stand for 15 minutes before cutting. Makes 8 servings.

1 pound bulk Italian sausage
1 package (15 ounces) refrigerated marinara sauce
1 can (14-1/2 ounces) diced Italian tomatoes, undrained
1/2 pound sliced fresh mushrooms
1 cup (4 ounces) shredded part-skim mozzarella cheese

Cook tortellini according to package directions. Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink; drain.

Stir in marinara sauce, tomatoes and mushrooms. Bring to a boil. Reduce heat; cover and simmer for 5 minutes or until mushrooms are tender.

Drain tortellini; stir into skillet. Sprinkle with cheese. Remove from the heat; cover and let stand for 5 minutes or until cheese is melted. Makes 8 servings.

Eggplant Sausage Casserole

1 package (16 ounces) penne pasta
2 pounds bulk Italian sausage
1 medium eggplant, peeled and cubed
1 large onion, chopped
2 garlic cloves, minced
2 tablespoons olive oil
1 can (28 ounces) diced tomatoes, undrained
1 can (6 ounces) tomato paste
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon paprika
1 carton (15 ounces) ricotta cheese
4 cups (16 ounces) shredded part-skim mozzarella cheese, divided

Cook pasta according to package directions. Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink; drain. Set sausage aside.

In the same skillet, saute the eggplant, onion and garlic in oil. Stir in the tomatoes, tomato paste, salt, basil and paprika; simmer, partially covered, for 15 minutes. Remove from the heat. Drain pasta; stir into eggplant mixture. Add sausage.

Spread half of the sausage mixture in a greased 13-in. x 9-in. baking dish. Spread with ricotta cheese. Top with half of the mozzarella cheese and remaining sausage mixture.

Cover and bake at 350° for 40 minutes. Uncover; sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before serving. Makes 12 servings.

Chili Cheddar Penne

1-1/3 cups uncooked penne pasta
4 teaspoons butter
4 teaspoons all-purpose flour
1 cup milk
2 cups (8 ounces) shredded cheddar cheese
4 teaspoons taco seasoning
1/4 teaspoon salt
2/3 cup frozen corn, thawed
2/3 cup chopped fresh tomatoes
1 can (4 ounces) chopped green chilies, drained
Sliced avocado, optional

Cook pasta according to package directions. Meanwhile, in a large saucepan, melt butter over medium heat. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.

Reduce heat to medium. Stir in the cheese, taco seasoning and salt. Cook and stir for 2-3 minutes or until cheese is melted. Drain pasta; stir into cheese sauce.

Cook and stir for 3 minutes or until heated through. Stir in the corn, tomatoes and chilies just until combined. Garnish with avocado if desired. Makes 6 servings.

Spinach Tuna Noodle

5 cups uncooked egg noodles
1 cup (8 ounces) sour cream
1/2 cup mayonnaise
2 to 3 teaspoons lemon juice
2 tablespoons butter
1/4 cup all-purpose flour
2 cups milk
1/3 cup plus 2 tablespoons shredded Parmesan cheese, divided
1 package (10 ounces) frozen chopped spinach, thawed, squeezed dry
1 package (6 ounces) chicken stuffing mix
1/3 cup seasoned bread crumbs
2 cans (6 ounces each) water-packed tuna, drained and flaked

Cook noodles according to package directions. Meanwhile, in a small bowl, combine the sour cream, mayonnaise and lemon juice; set aside.

In a large saucepan or Dutch oven, melt butter. Stir in flour until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened.

Reduce heat; stir in 1/3 cup Parmesan cheese until melted. Remove from the heat; stir in the sour cream mixture. Add the spinach, stuffing mix, bread crumbs and tuna; mix well.

Drain noodles and place in a 13-in. x 9-in. baking dish coated with cooking spray. Top with tuna mixture; sprinkle with remaining Parmesan cheese.

Cover and bake at 350° for 35 minutes. Uncover; bake 5-10 minutes longer or until lightly browned and heated through. Makes 8 servings.

Cheesy Ham Tortellini

1 package (19 ounces) frozen cheese tortellini
1 jar (17 ounces) Alfredo sauce
1 package (16 ounces) frozen California-blend vegetables, thawed
2 cups cubed fully cooked ham
1/3 cup grated Parmesan cheese
1 tablespoon minced fresh parsley

Cook tortellini according to package directions. Meanwhile, in a large saucepan, combine the Alfredo sauce, vegetables and ham. Bring to a boil over medium heat.

Reduce heat; cover and simmer for 15-20 minutes or until vegetables are crisp-tender. Drain tortellini; add to sauce. Stir in Parmesan cheese; cook until heated through. Sprinkle with parsley. Makes 6 servings.

Shrimp Scampi

3 to 4 garlic cloves, minced
1/4 cup butter, cubed
1/4 cup olive oil
1 pound uncooked medium shrimp, peeled, deveined
1/4 cup lemon juice
1/2 teaspoon pepper
1/4 teaspoon dried oregano
1/2 cup grated Parmesan cheese
1/4 cup dry bread crumbs
1/4 cup minced fresh parsley
Hot cooked angel hair pasta

In a 10-in. ovenproof skillet, saute garlic in butter and oil until tender. Stir in the shrimp, lemon juice, pepper and oregano; cook and stir for 2-3 minutes or until shrimp turn pink.

Sprinkle with Parmesan cheese, bread crumbs and parsley. Broil 6 in. from the heat for 2-3 minutes or until topping is golden brown. Serve over pasta. Makes 4 servings.

Sausage Marinara Sauce

1 pound Italian sausage links, casing removed
1 medium onion, thinly sliced
1 medium sweet red pepper, julienned
1 medium green pepper, julienned
1 teaspoon olive oil
1 can (15 ounces) crushed tomatoes
1 cup chicken broth
5 tablespoons tomato paste
3 to 4 teaspoons sugar
1-1/2 teaspoons dried basil
1/4 teaspoon garlic powder
Hot cooked penne or pasta of your choice

Crumble sausage into a skillet. Add the onion, peppers and oil. Cook over medium heat until sausage is no longer pink and vegetables are tender; drain.

Add the tomatoes, broth, tomato paste, sugar, basil and garlic powder; heat through. Serve over pasta. Makes 6 servings.
