Cheesy Zucchini Casserole

2-1/2 pounds zucchini, cut into 1/2-inch cubes
1 cup diced process American cheese (Velveeta)
2 tablespoons butter
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup crushed saltines (about 10 crackers)

Place zucchini in a saucepan and cover with water; cook over medium heat until tender, about 8 minutes. Drain well. Add cheese, butter, salt and pepper; stir until the cheese is melted.

Transfer to a greased shallow 1-1/2-qt. baking dish. Sprinkle with cracker crumbs. Bake, uncovered, at 400° for 10-15 minutes or until lightly browned. Makes 6 servings.

La tee da! A Souffle! Fancy!
This one ain't just for regular dinner or plain old company. I save this one for fancy company like the Preacher or the Avon Lady.

Pictured are my boys Goat, Little Ray Ray and there friend Skeeter last Halloween. They went as their favorite food: Twinkies! Now believe it or not I made them costumes myself!

Get 18 yards of yellow felt
A hot glue gun
Magic Marker
Cut Felt into 6 -3 foot pieces
round off the tops
hot glue the edges of two pieces together
cut out arm holes and eye holes
draw on face!
I know, I know you'd think I was a professional huh?

Tuna And Twinkie Souffle:

Ingredients
1 Tbl rendered chicken fat, divided
12 Hostess Twinkies
Salt
White Pepper
1/2 tsp dry mustard
4 eggs, separated
2 cans tuna in oil, drained, reserve oil.

Directions

Preheat oven to 350 F.
Grease a 7-inch soufflé dish with 1 tsp of chicken fat and 1 tsp tuna oil.

Slice Twinkies in half lengthwise. Remove and reserve cream filling.

In a large food processor, combine Twinkie cakes, half of the Twinkie filling, and the remaining chicken fat and tuna oil.

Blend until the mixture has reached the consistency of a thin batter.

Transfer ingredients to a medium saucepan and cook over low heat. Stir in salt, white pepper, and mustard. Remove from heat.

Beat in egg yolks, one at a time, beating thoroughly after each addition. Fold in tuna. In a medium bowl, beat egg whites until stiff but not dry. Fold beaten egg whites into tuna mixture. Pour into greased soufflé dish.

Bake in 350 oven 40 to 45 minutes, or until puffed and golden brown. Top with remaining Twinkie cream.

Noodle-and-Spinach Casserole

1 (8-oz.) package wide egg noodles
1 1/2 pounds ground beef
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 (26-oz.) jar spaghetti sauce
1 teaspoon Italian seasoning
1 (10-oz.) package frozen chopped spinach, thawed and drained
2 cups (8 oz.) shredded Monterey Jack cheese
1 1/2 cups sour cream
1 large egg, lightly beaten
1 teaspoon garlic salt
1 1/2 cups (6 oz.) shredded Parmesan cheese

Cook noodles according to package directions; drain and set aside. Cook beef and next 3 ingredients in a large nonstick skillet over medium heat, stirring until beef crumbles and is no longer pink. Drain and return to skillet. Stir in spaghetti sauce and Italian seasoning.

Combine spinach and next 4 ingredients. Fold in noodles; spoon mixture into a lightly greased 13- x 9-inch baking dish. Sprinkle with half of Parmesan cheese. Top evenly with beef mixture and remaining Parmesan cheese.Bake at 350° for 30 minutes or until bubbly and golden. Makes 8 to 10 servings

Sausage Pie

16 fresh pork sausage links (about 1 pound)
1/2 medium green pepper, chopped
1/2 medium sweet red pepper, chopped
1 tablespoon canola oil
3 cups cooked long grain rice
4 to 5 medium tomatoes, peeled and chopped
1 package (10 ounces) frozen corn, thawed
1 cup (4 ounces) shredded cheddar cheese
2 tablespoons minced fresh parsley
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon dried basil
1 cup soft bread crumbs
2 tablespoons butter, melted

Place sausages on a rack in a baking pan. Bake at 350° for 15 minutes or until lightly browned and no longer pink. Cut into 1-in. pieces; set aside. In a large skillet, saute peppers in oil for 3 minutes or until crisp-tender. Transfer to a 3-qt. baking dish. Add the sausages and the next eight ingredients. Combine bread crumbs and butter; sprinkle over top. Bake, uncovered, at 350° for 30-40 minutes or until heated through. Makes 6-8 servings.

Chicken Casserole

1 (4 1/2- to 5-lb. ) whole chicken
2 celery ribs, cut into 3 pieces each
2 carrots, cut into 3 pieces each
2 1/2 to 3 tsp. salt
2 tablespoons butter
1 medium onion, chopped
1 medium-size green bell pepper, chopped
1 garlic clove, pressed
1 (10 3/4-oz.) can cream of mushroom soup
1 (10 3/4-oz.) can cream of chicken soup
2 (10-oz.) cans diced tomatoes and green chiles, drained
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon Mexican-style chili powder
3 cups grated sharp Cheddar cheese
12 (6-inch) fajita-size corn tortillas, cut into 1/2-inch strips

If applicable, remove giblets from chicken, and reserve for another use. Rinse chicken. Place chicken, celery, carrots, and salt in a large Dutch oven with water to cover. Bring to a boil over medium-high heat; reduce heat to low. Cover and simmer 50 minutes to 1 hour or until chicken is done. Remove from heat. Remove chicken from broth; cool 30 minutes. Remove and reserve 3/4 cup cooking liquid. Strain any remaining cooking liquid, and reserve for another use.

Preheat oven to 350°. Melt butter in a large skillet over medium-high heat. Add onion, and sauté 6 to 7 minutes or until tender. Add bell pepper and garlic, and sauté 3 to 4 minutes. Stir in reserved 3/4 cup cooking liquid, cream of mushroom soup, and next 5 ingredients. Cook, stirring occasionally, 8 minutes.

Skin and bone chicken; shred meat into bite-size pieces. Layer half of chicken in a lightly greased 13- x 9-inch baking dish. Top with half of soup mixture and 1 cup Cheddar cheese. Cover with half of corn tortilla strips. Repeat layers once. Top with remaining 1 cup cheese. Bake at 350° for 55 minutes to 1 hour or until bubbly. Let stand 10 minutes before serving. Makes 8 to 10 servings

Note: 1 tsp. chili powder and 1/8 tsp. ground red pepper may be substituted for Mexican-style chili powder.

Quick-and-Easy Chicken Casserole: Substitute 1 (2-lb.) skinned, boned, and shredded deli-roasted chicken for whole chicken, 3 cups coarsely crumbled lime-flavored white corn tortilla chips for corn tortillas, and 3/4 cup chicken broth for cooking liquid. Omit celery, carrots, and salt.

Broccoli Rice Casserole

1 tablespoon oil
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped mushrooms
1 tablespoon minced garlic
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups cooked rice
1 can Cream of Mushroom Soup
1 cup sour cream
1 cup cottage cheese
2 cups finely shredded Mexican cheese blend
1 16 ounce bag frozen broccoli, thawed
1/2 cup slivered almonds
3/4 cup finely shredded cheddar cheese

Sauté celery, onion, and mushrooms until soft in oil. Add garlic, salt, and pepper and sauté another minute. Remove from heat and cool slightly. In a medium mixing bowl combine cooked rice, cream of mushroom soup, sour cream, cottage cheese, and Mexican cheese. Fold in thawed broccoli, onion mixture, and slivered almonds. Spray casserole dish with non-stick spray. Pour broccoli rice mixture into pan and top with cheddar cheese. Bake at 350 degrees for 45 minutes until golden in color. Cool at least 5 minutes before serving. Makes 12 servings

Pepperoni Macaroni Bake

2-1/2 cups uncooked elbow macaroni
1 pound bulk Italian sausage
1 large onion, chopped
1 can (15 ounces) pizza sauce
1 can (8 ounces) tomato sauce
1/3 cup milk
1 package (3-1/2 ounces) sliced pepperoni, halved
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 can (2-1/4 ounces) sliced ripe olives, drained
1 cup (4 ounces) shredded part-skim mozzarella cheese

Cook macaroni according to package directions. Meanwhile, in a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Drain macaroni.

In a large bowl, combine the pizza sauce, tomato sauce and milk. Stir in sausage mixture, macaroni, pepperoni, mushrooms and olives. Transfer to a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 30 minutes. Uncover; sprinkle with cheese. Bake 10-15 minutes longer or until heated through and cheese is melted. Makes 8 servings.

Biscuits and Gravy Breakfast Casserole

1 lb pork sausage
2 T butter
2 packages Sausage Gravy Mix (makes 2 cups per package)
12 eggs
1 (5 oz) can evaporated milk
½ tsp salt
2 tubes refrigerated biscuits

Cook sausage, set aside. In large saucepan, make gravy according to directions. Add sausage to gravy, set aside. Whisk eggs, evaporated milk and salt. Soft scramble eggs with the butter. Layer gravy, eggs, gravy, eggs, gravy, then top with biscuits. Bake for 20 to 25 minutes at 350 degrees until biscuits are golden brown.

Taco Bake

1 pound ground beef
1 packet taco seasoning
* water as called for on back of seasoning packet
3 large flour tortillas (8-inch size)
1/2 cup Salsa Con Queso
1 1/2-2 cups shredded Mexican cheese blend

Brown and crumble ground beef. Drain excess grease. Add in taco seasoning and water (following directions on back of seasoning packet).
Once the taco meat is ready, turn off heat and add in 1/2 cup salsa con queso. Stir until thoroughly combined.
Preheat oven to 350 degrees. Spray an 8-inch round baking pan with nonstick cooking spray. Layer the bottom of the pan with a flour tortilla.

Now add about 1/3 of the ground beef taco filling on the the first layer. Then add 1/3 of the shredded cheese. Continue until you are done with all the layers: another tortilla, more taco mixture, more cheese. Bake at 350 degrees for about 15-20 minutes. Until cheese is melted and edges are slightly golden brown. Allow to cool for a couple of minutes.
