Our Hearts Inn Baked Oatmeal

3 cups old-fashioned oatmeal
1/2 cup margarine or butter
1/4 cup packed brown sugar
2 eggs
2 tsp. baking powder
1 tsp. salt
2 cup milk
Optional: Dried Fruits: raisins, applies, cherries or cranberries and/or chopped nuts

Melt margarine (butter) and cool slightly. Meanwhile mix together the oatmeal, brown sugar, baking powder and salt in a large bowl. In a small bowl mix eggs, milk and melted margarine (butter); stir into the dry mixture. Bake in a buttered 13 x 9" pan. Or - we like to bake in individual "heart" ramekins!

Optional: Add 1/2 cup each chopped dried fruits and nuts of your choice before baking. We also like to bake without the fruits/nuts in the mix serving with a large dollop of vanilla yogurt with fruits and nuts sprinkled on top. Bake 350-375 for approximately 30 minutes. Makes 8 to 10 servings

Old World Inn Cornbread Casserole

2 large onions, chopped
6 tablespoons butter or margarine
2 eggs
2 tablespoons milk
2 17-ounce cans cream-style corn
1 16-ounce package cornmeal muffin mix
1/2 pint dairy sour cream (1 cup)
2 cups shredded sharp cheddar cheese

Preheat oven to 425 degrees. Butter a 13 x 9-inch inch baking dish. In medium skillet, saute onion in butter until golden, set aside. In medium bowl, mix eggs, and milk until blended. Add corn and muffin mix. Mix well.

Spread cornbread batter into baking dish. Spoon sauteed onion over top. Spread sour cream over onion. Sprinkle with cheese. Bake 35 minutes or until puffed and golden. Let stand 10 minutes before cutting into squares. May be refrigerated or frozen and reheated.

Oaks Country Inn Sausage Mushrooms and Apple in Puff

1/2 lb sausage
1 large apple, peeled and chopped
2 eggs beaten
3/4 cup dry herb stuffing mix
2 green onions sliced thin
5 mushrooms, cleaned and sliced
1 egg white beaten
2 tablespoons
Sesame seeds

Preheat oven to 400 degrees. Brown sausage until all pink is gone, add mushrooms and cook until soft. Drain well. Mix together in a bowl, sausage, mushrooms onions, chopped apple, stuffing mix and green onion, add beaten egg and mix well. Roll out pastry sheet to 16" x 12" rectangle.

Spread sausage mixture down the middle of the pastry. Brush edges of pastry with beaten egg white, then fold top and bottom ends over filling. Make 3" cuts at 1/2 inch intervals on sides of pastry. Fold one strip at a time, alternating sides until filling is totally enclosed.

Make 2 small cuts on each side to vent and brush top with remaining egg white. Sprinkle the sesame seeds on top of pastry. Place on baking sheet and bake for 30 minutes or until golden brown. 4 servings. Note: Maple Sausage can be used to add a different flavor and also chopped baked ham can be used instead of sausage.

Olive Garden's Alfredo Sauce

1 pint heavy cream
1 stick butter
2 tablespoons cream cheese
1/2 cup grated Parmesan cheese - (to 3/4)
1 teaspoon garlic powder

In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and garlic powder. Simmer this for 15 to 20 minutes on low. You may wish to season with a little salt and pepper. It has been made with half-and-half, but heavy cream is preferred.

Oak Square B&B Syllabub Custard

1-1/2 cup milk
3 eggs
3/4 cup sugar
1/2 teaspoon salt
3 cups light cream
2 cups sweet wine

Scald milk. Beat eggs and add sugar and salt. Gradually mix hot milk into egg mixture and cook over hot water, stirring constantly, until mixture thickens. Cool. Add the light cream and wine and refrigerate. Serve cold in custard cups or glasses. Makes 4 to 6 servings.
